2 pounds Round or Swiss steak, or Pork Roast | 2 tablespoons Vegtable Oil |
Salt | 1 Medium Onion |
2 Large tomatoes, peeled and chopped; or 1 cup canned tomatoes | 8 Fresh green chiles, roasted, peeled and chopped; or 2 4-oz cans chopped green chiles |
2 Clovess Garlic, chopped | 2 Mediums Potatoes, peeled and diced (optional) |
1. | Brown meat lightly in hot oil and salt to taste (note, if you have leftover meat or already grilled or cooked meat, skip to step 2 and to onions after they are cooked). |
2. | Add onions and cook until clear. |
3. | Add tomatoes and water to cover (note, Rotel is an excellent choice for canned tomatoes). |
4. | Add chiles and garlic. |
5. | Potatoes may be added if a heartier dish is desired. |
6. | Simmer 45 minutes to an hour. |
7. | Serve with tortillas. |
We consider the 8 green chiles (or eight ounces) a minimum amount. Personally, we like to double the amount.
